Ingredients:
- 4 cups of bread cubes (about 4-5 slices of bread, preferably day-old or slightly stale)
- 2 ripe mangoes, peeled and diced
- 2 cups whole milk (480 ml)
- 1/2 cup granulated sugar (100 grams)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 2 tablespoons unsalted butter, melted
- A pinch of salt
Instructions:
- Prepare the Bread:
- Preheat your oven to 350°F (175°C).
- Cut the bread into cubes and place them in a large mixing bowl.
- Prepare the Custard:
- In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg (if using), melted butter, and a pinch of salt until well combined.
- Combine Bread and Custard:
- Pour the custard mixture over the bread cubes.
- Add the diced mangoes to the mixture and gently fold everything together to ensure the bread is well coated with the custard and the mangoes are evenly distributed.
- Let the mixture sit for about 10-15 minutes to allow the bread to absorb the custard.
- Bake the Pudding:
- Lightly grease a baking dish (about 8x8 inches or similar size) with some butter or cooking spray.
- Transfer the bread and mango mixture to the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and the custard is set (a knife inserted into the center should come out clean).
- Cool and Serve:
- Allow the pudding to cool slightly before serving. It can be enjoyed warm or at room temperature.
- Optionally, dust with powdered sugar or serve with a scoop of vanilla ice cream or a dollop of whipped cream.
