Ingredients:
For the Bun Dough:
- 200 ml warm milk
- 1 tbsp sugar
- 1 tsp yeast
- 1 egg (room temperature)
- 1/2 tsp salt
- 2 tbsp oil
- 2 and 1/2 cups all-purpose flour
For the Chicken Filling:
- 500 gm boneless chicken, cooked and shredded
- 1 medium-sized onion, chopped
- Green chili (to taste), finely chopped
- 1/2 tbsp ginger garlic paste
- 1/2 cup tomato puree
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- 2 tbsp tomato ketchup
- 2 tbsp coriander leaves, chopped
- 1 tbsp all-purpose flour
- 1 cup milk
- Mozzarella cheese, shredded (as needed)
For Topping:
- Sesame seeds and black cumin seeds
- Butter (for brushing)

Preparing the Bun Dough:
- In a mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- Add the egg, salt, and oil to the yeast mixture and whisk until well combined.
- Gradually add the all-purpose flour and knead the dough until it's soft and elastic.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour or until doubled in size.

Making the Chicken Filling:
- Heat oil in a pan and sauté chopped onions until translucent.
- Add green chili and ginger garlic paste, and cook for a minute.
- Stir in the shredded chicken and cook for another 2-3 minutes.
- Add tomato puree, coriander powder, red chili powder, garam masala powder, and tomato ketchup. Mix well and cook for 5 minutes.
- In a small bowl, mix all-purpose flour with milk to make a slurry. Add this to the chicken mixture to thicken it.
- Finally, add chopped coriander leaves and mix well. Remove from heat and let it cool slightly.

Assembling the Chicken Buns:
- Punch down the risen dough and divide it into equal-sized portions.
- Take each portion of dough and flatten it into a small disc.
- Place a spoonful of the chicken filling in the center of each disc, along with some shredded mozzarella cheese.
- Gather the edges of the dough and pinch them together to seal the filling inside, shaping each portion into a bun.

Baking:
- Preheat your oven to 180°C (350°F).
- Place the assembled buns on a baking tray lined with parchment paper.
- Brush the tops of the buns with melted butter and sprinkle sesame seeds and black cumin seeds on top for added flavor and texture.
- Bake in the preheated oven for 20-25 minutes or until the buns are golden brown and cooked through.

- Once baked, remove the chicken buns from the oven and let them cool slightly before serving.
- Serve warm with your favorite dipping sauce or enjoy them as they are!
