Ingredients:
- 2 cups all-purpose flour

- 2-3 tbsp oil
- Water (as required)
- 2 medium-sized boiled potatoes

- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp chaat masala
- 2-3 tbsp oil (for frying)
- 1 medium-sized onion, chopped
- 1 tbsp chopped green chili
- 2-3 tbsp chopped coriander leaves

- In a large mixing bowl, combine the all-purpose flour, salt, and sugar.
- Gradually add oil while mixing until the mixture resembles coarse crumbs.
- Slowly add water and knead until a soft dough forms. Cover and let it rest for 15-20 minutes.

Make the Potato Filling:
- Peel and mash the boiled potatoes in a bowl.
- Add salt, red chili powder, coriander powder, chaat masala, chopped onion, green chili, and coriander leaves. Mix well to combine.

Form the Parathas:
- Divide the dough into equal-sized balls.
- Take a dough ball and roll it out into a small circle on a floured surface.
- Place a portion of the potato filling in the center of the circle.
- Gather the edges of the dough and seal the filling inside, forming a ball.
- Gently flatten the ball and roll it out into a flat disc, ensuring the filling is evenly distributed.

- Heat a griddle or skillet over medium heat.
- Place a rolled-out paratha onto the heated griddle.
- Cook for about a minute, then flip the paratha.
