Ingredients:
- 2 Pomfret fish (medium-sized), cleaned and sliced
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 tsp sugar
- Salt to taste
- Mustard oil for cooking
- Fresh coriander leaves for garnish

Marinating the Fish:
- Clean the Pomfret fish thoroughly and make incisions on both sides.
- In a bowl, mix turmeric powder, red chili powder, and salt.
- Rub this mixture onto the fish pieces, ensuring they are evenly coated.
- Let the fish marinate for about 15-20 minutes.

Preparing the Curry Base:
- Heat mustard oil in a pan or kadhai over medium heat.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger paste and garlic paste, and cook for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn mushy and the oil starts to separate.
- Now, add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.

Cooking the Fish:
- Once the masala is well-cooked, add slit green chilies and a pinch of sugar to balance the flavors.
- Carefully place the marinated Pomfret fish pieces into the masala.
- Coat the fish pieces with the masala gently, taking care not to break them.
- Cover the pan and let the fish cook on low heat for about 5-7 minutes or until it is cooked through.

- Once the fish is cooked, sprinkle garam masala powder over the curry.
- Garnish with fresh coriander leaves for added freshness and flavor.
- Serve hot with steamed rice, along with some lemon wedges on the side for a tangy kick.
